These are really under-ripe. Do they still taste good when they’re so green?
They will continue to ripen off the tree.
As far as tasting good it depends a long on the variety. There are astringent varieties which taste like edibledessicant trying to mummify you from the inside out. These are fuyu persimmons which are not astringent. They’re crunchy kind of like an apple but very mild flavored. Personally I like them fully ripe or even ripened and dehydrated.
For me to get to enjoy them they have to survive the deer and my wife; I’m not expecting to get any this year 😅
I tried to get some wild persimmons to make some wine, but the birds got to them first. Oh well, I’ll try again next year.
Wild persimmons are tricky since they have to be sooo ripe to be palatable.
How old is your tree(s)?
This is our second season with it. It was full of fruit when we brought it home from the nursery last year but it dropped all that fruit from the stress of transplanting it.
Put 'em in a paper bag with a banana and they’ll be ripe in no time!
